Everything in Windows, the background color, the fonts of the title bars, the selecting of menu tiems, are all controlled in the Appearance section of the screen saver. You can make changes to the appearance in one of two ways. Firstly, you can select a Scheme to follow. There are 25-30 different schemes to follow, depending on the computer in question. The Appearance box will show a sample of each scheme. You could also select each item and change the colors and fonts individually. If you choose the latter method, it can be saved as a scheme by clicking on the "Save As" button and giving it a name.
