ESRI has tons of resources related to data mapping. They are the "mothership."
ArcExplorer is another free GIS software for the classroom, similar to MyWorld.

National Atlas of the US:  A nice site to make maps of agriculture, biology, environment, people, climate, and other data.
MapQuest:  Customizable maps of anywhere in the US, including aerial photos. 
ECAI Clearinghouse Search. A GIS viewer which linkes together hundreds of digital projects created by libraries, museums and scholars worldwide. 
New York City "Social Explorer" site - historical census data, ethnicity.

Static Maps
David Rumsey Historical Map Collection.  Over 10,000 maps of the Americas, focusing on the 18th and 19th centuries.
Electronic Map Library:  Very cool GIS maps with 1990 and (some) 2000 census data using colored dots.  Maps for many cities, including Chicago.
