On television shows, such as ER and CSI, do they use
[real] doctors/forensic scientists [as consultants] to make sure
everyone is doing and saying what the real thing would
be?

Yes, I have heard that the writers and directors of television shows
like ER and CSI use experts (doctors and forensic scientists) as
consultants. This is true of movies too. Although, sometimes the creators
of a movie or tv show won't always follow the advice of the experts, if they
think the reality/truth is something the general public will not understand
or like. The creators of movies and tv will try to make things more
exciting than they really are, to keep people's interest, but generally
appear to do a good job making it seem real too, with the right actions and
words.
